I'm sitting in a deck chair outside the Bamboo Bar of the Aquarium [11 Kemah Waterfront, (281)334-9010], praying for a breeze. I take another big slurp of my Goombah Splash and feel the frozen rum do its thing. There's a fountain game for kids nearby. Every ten seconds or so, a different set of jets goes off and streams of water shoot high into the sky while kids run around screaming in their bathing suits. Out in Galveston Bay, an impressive 40-foot yacht chugs through the chocolate-colored water on its way to the marina. I wonder who's having more fun? The Bamboo Bar's Goombah Splash: The Bamboo Bar is an exotic open-air lounge with fake palm trees and lots of palapas. So, of course, I had to go for a tropical cocktail. Bartender Matt Hart recommended this variation on a piña colada. The extra shot of Myers's rum not only gives the drink a flavor boost, but it also makes it very potent. Just what you need when you're trying to ignore the heat. 1 1/2 cups crushed ice Put the ice in the blender and pour the light rum, pineapple juice and Coco López over it. Blend until slushy. Put the orange juice in the bottom of a tropical cocktail glass and pour the slush over the top. Pour the Myers's on top as a floater.
