At the long wooden bar near the entrance, a blond in a red jacket (Chanel?) and knee-high black boots is laughing hysterically at something her girlfriend in the cream-colored suede pants and cashmere sweater just said. Carrabba's [3115 Kirby Drive, (713)522-3131] is a singles zoo on Thursday night, and everybody is dressed like they just came from a River Oaks cocktail party. This fall the drink to be seen with here is an apple martini.

Carrabba's Apple Martini: Bartender Ernaldo Benitez makes his apple martini with half vodka and half Apple Pucker, and you can too, if you like it tart. But if you find yourself puckering a little too much, Benitez recommends this slightly sweeter blend. You can garnish it by floating a slice of Granny Smith apple on top, but at Carrabba's they just add a cherry.
2 shots vodka
1 shot DeKuyper's Sour Apple Pucker
1/2 shot Midori
Slice of Granny Smith apple or a cherry
Shake over ice for a full minute or until some crystals appear in the drink. Strain into a chilled martini glass and garnish with the apple slice or cherry. Makes one drink.
