Gramercy Tavern's Gin-Ger and Tonic

Many thanks to all the Houston bartenders who served me imaginative libations over the past year. Stirring and shaking will henceforth be administered by that talented mixologist George Alexander. But as a farewell gift, I'd like to pass along the recipe for a spectacular cocktail I had out of town recently. I can't wait to drink one in Houston. Anybody who's making something like this, e-mail me immediately!

Gramercy Tavern's Gin-Ger and Tonic: This Gotham eatery is as famous for its innovative cocktails as it is for its stellar food and impeccable service. You can make this cocktail by soaking a large piece of sliced ginger root in a whole bottle of Tanqueray, or you can make them one at a time with this recipe.

2 teaspoons fresh ginger juice (use a garlic press)
2 shots Tanqueray gin
1 wedge fresh lime
Tonic
Crystallized, sugared ginger

Put the ginger juice in a tall glass and add the gin. Fill the glass with ice cubes. Pour in tonic and top with a squeeze of lime. Spear the candied ginger with a toothpick and balance it on the rim of the drink.
