You'd better be in line before noon at Guy's Meat Market (3106 Old Spanish Trail, 713-747-6800) if you want to try one of the 200 barbecue hamburgers ($3.93) they make Tuesdays through Fridays. The half-pound, handmade patties are slow-cooked on the barbecue pit until they reach a state of smoky perfection. Occasionally, the slow cooking results in a somewhat dry patty, which easily can be remedied with a drizzle of barbecue sauce, adding even more flavor. The burgers are served on sesame-seed buns with the traditional fixin's: lettuce, tomato, onion, pickle, cheese and jalapeños. You'll notice the burger has the requisite red smoke ring on its outskirts, indicating a long time on the pit and a smoked flavor that will linger with you. Pity customer No. 201!
