Don't be shocked when you see the famous "seven finger pork chop" ($23.95) at Perry's Steakhouse & Grille (2115 Town Square Place, 281-565-2727), which stands a full seven fingers tall on the plate before the server carves it up tableside. It takes five days to make this dish, with the pork (eyelash, ribs and tenderloin) first cured, then slow-smoked over pecan before being roasted and caramelized in the oven. The dish comes to the table in an herb-garlic sauce that's almost superfluous, since the smoky, roasted and caramelized flavor of the meat is out of this world. The chop is served with homemade applesauce and dill mashed potatoes.
