Restaurateurs turn them into bread pudding, or capirotada, which is traditionally served during Lent and Christmas. The capirotada ($6.90) at Pappasito's (6445 Richmond, 713-784-5253) is dense and chocolaty; it looks a lot like a brownie but has the consistency of bread soaked in milk. Covered in chocolate and angloise cream, the dessert is served warm, with a couple of scoops of cinnamon ice cream.
