Suya, a Northern Nigerian specialty, is a beef or chicken kebab cooked over a charcoal grill and served on a wooden skewer. It bears a striking resemblance to Thai satay. At Suya Hut (11611 W. Airport, 281-265-1411), you can get them individually ($.99 for beef and $1.99 for chicken) or on a plate ($4.99), which comes with two suyas, rice and plantains. A crunchy peanut sauce served on the top makes this a tasty snack. If you're ordering your suyas individually, be warned: One isn't enough. In fact, it's easy to polish off a whole plate of these and still want more.
