Lajitas is a small town in west Texas, between Laredo and El Paso, with a population of 48, according to www.texasonline.com. It's also the inspiration for the chicken Lajitas ($13) at Terlingua Texas Border Cafe (920 Studemont, 713-864-3700). A whole chicken breast is sliced in two, then marinated in Mexican spices and char-grilled. So far, nothing out of the ordinary. Then comes the topping — a marriage of Monterey Jack cheese and creamy artichoke-spinach sauce, not unlike the famous dip. It's a great idea to use this popular dip to top off a piece of chicken. It's a marriage made in heaven, served with yellow rice and charro beans.
