In Switzerland, they're rösti; in Germany, they're Kartoffelpuffer; in Yiddish, they're latkes; and in Ireland, they're known as boxty, or bacstai in Gaelic. They're all versions of the potato pancake, and as for boxty, you can only find it in Houston at The Angel & The Ox Pub & Restaurant (22758 Westheimer Pkwy., 281-395-7055). It's well worth seeking out. There are three versions here — the traditional; the mixed vegetable, chicken and sage; and the corned beef and cabbage. The traditional ($9.99), made with Irish bacon and lots of Irish cheddar cheese, is very reminiscent of an Irish breakfast all wrapped up in a potato pancake. It's as delicious as it is filling.
