Crawfish Season's Tail End

The bugs get bigger and the prices lower as the season comes to a close.

When I wrote about Asian-Cajun crawfish back in 2002, there was very little difference between the Vietnamese and the Cajun version. But now, with the addition of the garlic butter and lemon pepper flavoring choices and the little bowls of dipping sauces offered at the table, it's fair to say that Vietnamese crawfish restaurants have developed their own unique style.

Which is not to say they are all the same. There are half a dozen new crawfish joints in the Little Saigon area. I also visited a new Vietnamese-style crawfish restaurant a few blocks down Beechnut called Jolynn's. The owner said she was from Washington State. Her crawfish came in the same garlic butter and lemon pepper flavors, but the medium spice level there wasn't very hot at all. At Jolynn's, the garlic butter crawfish tasted like crawfish and garlic butter — and that's it. It was kind of pleasant to savor the delicate flavor of the crawfish instead of cayenne. The crawfish are bigger and cheaper too, at only $5 a pound.

Even though his company, Louisiana Foods, is a major crawfish source in Houston, Gossen had never eaten crawfish Vietnamese-style before. He was very impressed. He was especially fond of the boiled crab.

"The crawfish aren't that big, but that was a No. 1-size crab, and it had a lot of meat in it," he said. The crab was seasoned the same as the crawfish. "They're really tasty," he said, digging in a plastic bag for another mudbug. "But they sure are messy."

You still have plenty of time. The 4th of July is the traditional end of the season, Gossen said. Boiling Crab claims it will have plenty of crawfish through September.
