Linda Smith is affable, generous and hospitable. After Hurricane Rita, she moved to Houston from Breaux Bridge, Louisiana, to rebuild her life. And she's making some of her family-favorite recipes at Louisiana Creole Cafe (3717 Dowling, 713-807-1700). "I'm cooking like I did back home, you know, smothered pork chops, oxtails, crawfish étouffée. On Wednesdays and Fridays, we have seafood specials and on Saturdays, barbecue. Everything we cook is well seasoned. This is a homey place where you won't have any worries about anything and where you can have a conversation with customers and get to know them."

She's offering desserts too, of course. "Oh yeah, we have banana pudding, sock it to me cake and a wonderful strawberry cheesecake." Dish cannot attest to the desserts, because they weren't quite ready when we visited the week Louisiana Creole Cafe opened, but we can enthusiastically endorse both the crawfish étouffée, which is some of the best in the city, and the pistolettes, exquisite Cajun-stuffed rolls.
