The Oysters Barone ($7.95) at Ciao Bello (5161 San Felipe, 713-960-0333) are an example of an appetizer that showcases some of the best ingredients and flavors that the Vallone empire has to offer. Four large oysters are wrapped in mozzarella cheese and then covered in oregano-spiced breadcrumbs before being deep-fried to a crispy, golden-brown finish. The oysters are so large, they almost look like stuffed jalapeños. They are served with a white wine, lemon-garlic sauce that adds an interesting tartness. Biting through the crisp breaded exterior into the soft oyster makes for a fascinating textural journey.
