Pappardelle campagnolo at Carrabba's

The pappardelle campagnolo ($16) at Carrabba's (3115 Kirby, 713-522-3131) showcases lots of basic Italian ingredients. Inch-wide, homemade pasta is mixed in a large bowl with sausage (a Carrabba's family recipe), onions, fresh tomatoes, sweet and hot peppers, and the wonderful sauce. The final splash of color comes from a brilliant white medallion of goat cheese sitting in the middle of the bowl. While you'll want to dig in as soon as the plate hits the table, allow enough time for the goat cheese to melt, then mix it in for an extra tangy flavor.
