Dish: Mumbai Spice

Arun Bakhshi traveled the world with Bombay Palace Indian restaurants, working in New York; Mexico City; Washington, D.C.; and Houston. He also did a stint at Yatra Brasserie here in town before deciding to branch out on his own and open Mumbai Spice (12102 Westheimer, 281-759-1400) in a space that started out as Cliff's, then became Texadelphia, then Singha Thai.

"I know the business well, so why not?" said Bakhshi. "I can be more creative without the constraints of partners. I wanted to bring an authentic fine-dining Indian restaurant to the west side of town serving fresh, wholesome and tasty food." And Bakhshi is proud of his chef. "Mixing the masalas [spice mixes] takes a lot of skill, and I am very fortunate to have worked with the same chef for many years," he said. "He has quite a culinary lineage; his father and grandfather were also chefs."

Much of the decor is left over from previous owners, and the white-tablecloth restaurant has a contemporary, elegant feel. While the menu is certainly extensive, Bakhshi said he does not plan to offer a buffet, unlike many Indian restaurants around town.

Dish ordered the nonvegetarian combo lunch special consisting of chicken tikka masala, lamb ­roganjosh and shrimp vindaloo. Traditionally, a vindaloo curry is one of the hottest available. But while the dishes here were flavorful and freshly made, they lacked the kind of heat level normally found in Indian restaurants. During our phone interview, Bakhshi asked how we enjoyed the food. When we mentioned the lack of heat, he said, "That's the easiest problem to fix. Next time, tell them to make it hot."

    The food doesn't seem to reflect all of this "experience", although the samosa chat was amazing, my chicken tikka masala was tough, still good flavor and the rice portion is to small for my liking. No lunch buffet is a turn off. I guess I'm neither impressed nor completely dissatisfied.

    I agree with the everything about Mumbai Spice and the owner/manager arun bakhshi should start giving value to his employees... not everyone knows what happens behind the doors of Mumbai Spice after business is over. Arun does not pay the employees the salary on time, does not give the tips to the waiter/waitresses. Ever wondered why most of the time all they have are male servers or employees? its because the same thing happened to me and 3 other females (which my old co workers told me about) that used to work there. He wanted something from me and when i declined he cut my hours and eventually let go of me. He hired me knowing that I do not have the proper documents to be working in America. He took advantage of my situation and everyone else that is working there. One time he had called me to work for him to cater with another waiter, so i did and he said he was going to pay $100 for the whole night. At the end of the night as we packed up, the owner of the house came and gave me and my co worker our tip.. He gave me $60 and $80 for my coworker, coz he's done catering for that customer before. When we got back to the restaurant, Arun paid me $40 because he said thats the $100 i worked for. I tried to get the money i worked for but, he wouldn't. So if ever any one eats there, make sure you give the money to the waiter thats been helping you. He pays $7.25 / hour and no tips.
