Joe Joubert, originally from Lake Charles, Louisiana, has opened Cajun Made (7590 W. Bellfort, 713-988-9555). "I'm making all the Louisiana favorites from scratch, like gumbo, red beans and rice, boudin, po-boys, étouffée and even barbecue. And as soon as crawfish season opens in November, we'll have them too," he says.

Dish fell in love with Joubert's seasoned cracklings, which weren't greasy at all. The boudin had a heavy smoke flavor that tended to overpower the delicate stuffing, but the red beans and rice and the gumbo were decidedly homemade and delicious. A blackened catfish plate also showed its Cajun roots. It's almost possible to miss Joubert's handmade desserts, which are stuck in a plastic display case on the counter — almost. These desserts alone are reason enough to visit this place. Our fave was the sticky sweet potato bar, which was so good we had to buy two.
