The latest restaurant to open on Washington, TQLA (4601 Washington, 281-501-3237), specializes in — you guessed it — tequila. "We have over 170 different tequilas with eight of them on tap at five degrees," says Scott Lindsay, one of the owners. What's his favorite? "Ocho Rios. It's a single barrel blanco." Scott calls himself a "tequilier," which he says is similar to a sommelier. "Houston is a tequila-savvy town, and we're proud to have the biggest selection around," he says.

Lindsay has three partners — two investors, and his chef, Tommy Birdwell. He describes the food as "a blend of modern Mexican, Southwestern and coastal, with no compromise on quality. People really like our fire-roasted salsa and things like our fried oysters."
We agree that the oysters are not only different, but very tasty. The kitchen rolls the oysters in blue-corn flour, then fries them before covering them in a chorizo cream. The crawfish and spinach enchiladas are also excellent. While the bar dominates this large restaurant, the ultramodern interior makes this one of the hippest places on the Washington strip.
