Binding these cool, succulent torpedoes is the thinnest, springiest rice paper in town. The wrapper is so transparent you can identify all the fillings (vermicelli, bean sprouts, chopped lettuce and rectangular slices of bean curd) before even taking a bite. No tough corners to gnaw on here. The accompanying peanut sauce offers an extra burst of sweet flavor and sassy crunch.
