Early this year, we started working with the Houston Dairymaids and Jasper Hill Cellars in Vermont on a very special cheese. On Sunday, October 22, this Willoughby washed with Raspberry AF will make its brewery debut.
Willoughby is one of Jasper Hill’s delicious washed-rind cheeses. Similar to a brie in texture, it is slightly pungent with rich, meaty flavors thanks to the washes of brine it gets during ripening. For this batch, Jasper Hill spiked the brine with Raspberry AF, our Berliner Weisse brewed with real raspberries. While this doesn’t make the cheese taste like beer, it subtly changes the flavors, resulting in a distinct cheese.
On this afternoon, we’ll be pairing our handcrafted beers with several cheeses selected and brought by the Houston Dairymaids. It’s an afternoon at the brewery perfect for couples and groups alike.
We’ll have a few of the cheesemakers on hand to discuss the cheeses, and we’ll be talking about the beers. Reservations are $30 per person.
