The boys behind Revival Market bring you Coltivare, an Italian-influenced eatery with an emphasis on local produce, charcuterie and simple, flavorful dishes. The restaurant is always packed, and it doesn't take reservations, so wait times are sometime upwards of two hours for a table at the popular joint in the Heights. In general, it's worth the wait for a taste of chef Ryan Pera's unique takes on Italian food, like the classic cacio e pepe or the thick-crust pizzas with unusual toppings cooked in a wood burning oven. Much of the produce and herbs for the dishes comes from the large backyard garden, which changes seasonally. As such, the menu is always in flux, which may account for some inconsistencies here and there. Call as soon as the restaurant opens for the evening (5 p.m.) and put your name on a waiting list to avoid standing around in the crowded entryway and smelling all the wonderful food when you aren't yet able to eat it for yourself.
