Although the market at Hubbell & Hudson has closed, the bistro remains open, serving lunch and dinner to Woodlands patrons each day, as well as brunch on Saturdays and Sundays. Executive chef Austin Simmons and his team serve up contemporary American dishes showcasing the freshest ingredients of the season in this upscale restaurant. Simmons creates a variety of burgers and sandwiches topped with everything from melted brie and truffle dijonnaise to Sriracha mayo, avocado and oven-roasted tomatoes. Sophisticated dishes, such as the crispy quail served with white cheddar polenta and a cilantro emulsion, and braised pork osso bucco with a truffle risotto and orange-glazed baby bok choy, grace the dinner menu, alongside simple dry-aged prime NY strips and roasted chicken breast with baby vegetables and fingerling potatoes.
