With experience honed from working in more than 30 sushi restaurants, Kinjo has mastered the art of making nigiri sushi. To get the best experience, book an omakase, or chef's tasting dinner, at the sushi bar for an up-to-20-course journey into the world of sushi and sashimi. Tuesdays and Fridays will see exotic fish flown in from Tokyo's famed fish market, Tsukiji. Try a sashimi appetizer of shima aji with yuzu kosho (striped jack with pickled yuzu paste), and go beyond the familiar sushi staples like maguro (tuna) or sake (salmon) to try some of the more exotic fish, like a madai (sea bream) or kinmedai (golden eye snapper). At lunch, the grilled eel lunch special, which comes with miso soup and green salad, is excellent.
