Sengelmann Hall, a 115-year old saloon and dance hall in Schulenberg, has been closed up since the 1940s. Until last week, that is, when Houston entrepreneur Dana Roy Harper opened the doors to his million-dollar renovation on this sleepy main street halfway between Houston and San Antonio. While the small town itself was formally established in 1875, Czech and German settlers had already made their homes there for several decades prior and had brought with them the culinary heritage of their homelands in central and eastern Europe.
