100 Favorite Dishes 2012: No. 17, Drunken Foie Gras at Philippe

This year leading up to our annual Best of Houston® issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
What would a French restaurant be without foie gras? (Sorry, California -- too soon?) And what would a Philippe Schmit restaurant be without a cheeky twist on his homeland's standards? At his namesake Galleria-area restaurant, Philippe, Schmit takes swings at classical French dishes such as beef bourguignon by serving his "Burgundy beef cheeks" with a side of truffled macaroni and cheese under a section of the menu called "Unrestrained," while in other sections dishes listed under "Flirtations" or "Satisfaction...Guaranteed."
Schmit's drunken foie gras comes courtesy of the "Contained Decadence" portion of the menu, in which the kitchen highlights its bowls of fatty goodness -- the rillettes and terrines and such other fabulousness. True to its name, the supremely silky foie gras has been marinated in both Sauternes and Armagnac...and it shows.
Like the brandy-soaked foie gras that Amanda McGraw is currently serving at Brasserie 19, the mouth-coating fattiness of the duck liver is both cut and mellowed even further by the full-bodied sweet wine and brandy that Schmit uses. It's a lovely little luxury that requires absolutely no other accompaniment than a piece of soft, crusty brioche upon which to spread it -- and reminds that despite his cheeky antics, Schmit is still a supremely talented French chef at heart.
