100 Favorite Dishes 2012: No. 34, Whole-Fried Speckled Trout at Liberty Kitchen

This year leading up to our annual Best of Houston® issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
Liberty Kitchen has an affinity for seafood, whether it's a dozen oysters on the half-shell at its sleek, marble-topped oyster bar or the oversize bowl of Cajun gumbo that's brimming with okra and fried oysters. The East Coast-meets-Louisiana restaurant may be a jumble of odd influences and its menu may be overly ambitious, but its seafood -- with very few exceptions -- is always spot on.
And although I've enjoyed nearly every single seafood dish at the Heights hot spot, everything has so far been outshone by a whole-fried speckled trout I enjoyed one hot summer night. The fish's fine, dewy flesh was an ideal dinner for the humid evening, served in a simple herbed butter with a paprika-dusted lemon wedge that added bright pops of acidity. On the side, a perfectly cooked risotto and a bowl of bright-green spinach lightly sautéed in garlic made Liberty Kitchen seem momentarily more elegant than its clapboard walls and grade school-style chairs would suggest.
If I recall correctly, the fish was only a special that night. But for those who want to try Liberty Kitchen's take on a different freshwater trout, there's a dinner portion available for $18 -- which comes with garlic spinach, if you like, or alternate choices of sour cream mashed potatoes, french fries or creamy malt coleslaw.
If you get the chance, however, I recommend getting that fish fried whole: There's nothing like the sight of the fish, seemingly caught in mid-swim, arching spectacularly across your plate. And there's nothing like digging around in its little crevices -- in the head, under its cheeks or collar -- for the sweetest bites of fish left after you've eaten both fat filets.
