This year leading up to our annual Best of Houston® issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

Let's get one thing straight before we start. The spaghetti carbonara at Coppa Ristorante Italiano is not authentic. That said...who could possibly be bothered with authenticity when a dish is this amazing?

The carbonara sits at the very top of Coppa's list of pasta dishes for a reason: because you should order it first and foremost, before you even go exploring the rest of Brandi Key's elegant Italian menu. It's a wonderfully simple dish that comes with a fun, interactive presentation and it has the potential to win over anyone who tastes it.

Plump strands of spaghetti are served in a shallow bowl tossed with torn bits of salami and chopped parsley, topped with cracked black pepper and a single egg. On top of this goes a thick parmesan sauce -- poured tableside -- at which point you're invited to mix the entire thing together, egg and all, until it forms a creamy, salty, wonderfully rich sauce that coats every last length of pasta.

So, sure -- it's inauthentic. But I guarantee that after tasting Key's masterpiece, you'll be hard-pressed to care.
