100 Favorite Dishes: No. 10, Ribs at Gatlin's
This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
This is it, folks! We're in the final stretch: the countdown of Top 10 Dishes of our four-month-long list starts today. And you simply can't have a list of the 100 "best" dishes in Houston without including barbecue -- even if many of our 'cue joints are sadly lacking.
Gatlin's is one of the brightest stars in our barbecue constellation, however, with long lines every day that attest to its superiority in the city. We even named it Best Barbecue Restaurant in last year's Best of Houston® issue. And if you're keeping track, you'll notice that this list will end on the very same day as our 2011 Best of Houston® issue. Will Gatlin's reign supreme once again? That question -- and many more -- will be settled on September 29.
While everyone has their favorites here, it's the ribs at Gatlin's that have my heart. The ribs have a luscious char on the outside that comes from the low-and-slow smoking technique employed by Greg Gatlin, who uses hickory to impart a sweet aroma and taste. And although falling-off-the-bone rib meat may not be prized at barbecue competitions (WEIRDOS), it's prized here in Texas. where Gatlin's does it right. The meat is never soggy or soft, though; just moist and tender, with a pleasant crunch as you shatter through that exterior char into the sweet rib meat below.
