100 Favorite Dishes: No. 15, Snapper with Grapefruit at Kata Robata
This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
It's not so much this exact dish that charmed me so much at Kata Robata, as it is the fact that you can reliably walk into Kata -- easily the most challenging and creative sushi restaurant in town -- and find one of chef Manabu Horiuchi's intricate and dazzling new dishes greeting you each time, the ingredients changing not with the seasons but with the weeks.
One day, it's fresh Gulf snapper served with grapefruit, peppery arugula, mandolined carrots and a sticky-sweet miso glaze, the next it's scallop carpaccio with goat cheese or toro with hazelnuts, kimchi sauce and a poached egg. When sous chef Seth Siegel-Gardner departed Kata to collaborate with fellow chef Terrence Gallivan on their Pilot Light project, there was fear that the heady modernism Siegel-Gardner had brought to Kata would disappear too.
It did not, however, and Kata remains one of the only restaurants in Houston that rivals high-end, high-concept places in cities like New York and Chicago, thanks to the careful stewardship of Hori-san. And his regular sushi, sashimi and even ramen still holds its own against any other Japanese restaurant in the city.
