100 Favorite Dishes: No. 16, Migas at La Guadalupana

​This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

There was a point in time at which I was eating at La Guadalupana with such frequency, the waitresses would hand me the phone to answer when owner Trancito Diaz wasn't around to take calls in English. I don't know how Diaz felt about this, or even if he knew. But I don't think the jovial Diaz would care; he's usually busy passing out samples of the treats in his pastry case to kids or checking on his customers, making sure every order comes out correctly.

The migas at La Guadalupana are my go-to breakfast in Houston, along with a cup of cafe de olla -- the brightly cinnamon-spiced coffee that's a house specialty here -- and a tall, cold glass of sweet jamaica. The migas are nothing like what I've encountered in any other Mexican restaurant, almost the "chopped salad" version of the eggy breakfast dish. All of the ingredients -- tortillas, chorizo, bell peppers, onions -- are uniformly diced and tossed with the scrambled eggs, resulting in a far more festive (and more delicious) dish than the plain old egg-and-tortilla mish-mash that many of us grew up with.

The migas are usually in need of salt, but put down the shaker. The porky refried beans served on the side are the only complement you need. Sometimes I take one bite of migas, one bite of beans, on and on until it's all finished. Other times, I prefer to coat a flour tortilla with a thick spread of beans and fill it with migas for a fat breakfast taco. However you do it, La Guadalupana's migas are the best Mexican breakfast in town -- and for less than $7, you'll be full and happy. And maybe answering a phone call or two.
