​This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

I often find myself encouraging wary people (mostly pescatarians and the like) to eat at Feast based on the premise, "They serve so much more there than just meat!" Despite this, it's the pork that always charms me the most at Feast, whether it's in the form of gloriously fatty Bath chaps or a crispy-bottomed piece of pork belly.

The pork rillette is my favorite all-purpose pork preparation here, mostly because -- for all of their charms -- many of the pork plates are so heavy that I can't accomplish anything else for the rest of the day after eating them. The rough-hewn rillette, however, is perfectly portioned porky bliss in a bowl, served along with a sort of modern ploughman's lunch: cheese, bread, cornichons, onions. There's even a sort of housemade Branston pickle that pairs brilliantly with the fatty pork and cheese.

I love being able to make finger sandwiches in endless combinations with pork rillette as the only constant: pickled red onions, sage-infused Cheddar cheese and pork on one, pickle, pork and fierce Stilton on the next. Through it all, that clean, buttery flavor of the pork comes through most emphatically, befitting a restaurant whose three owners all bear tattoos of the noble pig.
