100 Favorite Dishes: No. 42, Akaushi Short Ribs at Soma Sushi

This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
Although many people tend to only think of Soma Sushi as a sushi restaurant (and why not: "sushi" is even right there in its name), the truth is that executive chef Jason Hauck makes a lot more than just maki. He's just as fond of putting French and Texan twists on Japanese favorites, such as the Hokkaido-style ramen that's currently on the menu, featuring Berkshire pork belly and Way Back When butter.
But as good as that ramen is, it doesn't hold a candle to one of Soma's crowning glories: truffle-glazed American wagyu short ribs, topped with a Boucheron goat cheese mousse, scallions, sesame seeds and cilantro. It's not as decadent as it sounds -- the ribs quickly melt on the tongue like butter on a hot skillet, but vanish with a clean flavor thanks to the cilantro and scallions -- and it's only $12 for a plate. Granted, you'll only get four large bites on that plate, but it's an affordable luxury.
My other favorite at Soma can only be found at the bar -- you're getting a two-fer today -- so it doesn't quite get its own spot on the list. But the Korean-style chicken wings, which appear to have been battered in tempura before receiving their sesame-studded, spicy-sweet glaze, are among my favorite three chicken wings in town (the other two being the chile de arbol-glazed wings at Xuco Xicana and the caramelized fish sauce wings at Thanh Phuong). And at only $6, they're an even better deal than the short ribs.
