100 Favorite Dishes: No. 43, Real Guacamole at Yelapa Playa Mexicana

​This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.

Although many things have changed about Yelapa since its inception in November 2009 -- two executive chefs have come and gone, the exterior has received a much-needed facelift, the back patio has bloomed into a cozy space -- the "real guacamole" has not. And I hope it never does. This is the dish I order every single time I visit, a dish first introduced by Yelapa's first chef, L.J. Wiley.

Instead of a mashed up paste of avocados, lime juice and other standard Tex-Mex additions, the "summer" version of the real guacamole at Yelapa showcases its parts as more just than the sum of the whole. Large, buttery chunks of avocado are paired with rough-diced mangoes and thin slices of pinky-green watermelon radish. The entire affair is drizzled with blood orange puree, with the chips tossed directly into the bowl -- no dipping required -- in a style that Geri Maria Harris once aptly compared to a panzanella.

I'm not as big a fan of the fennel-and-black-olive "spring" real guacamole, but the summer version pairs buttery against tart against sweet in such a beguiling way, you'll never miss a standard bowl of guac here.
