100 Favorite Dishes: No. 48, Sojok Mana'eesh at Cedars Bakery

This year leading up to our annual Best of Houston issue, we're counting down our 100 favorite dishes in Houston. This list comprises our favorite dishes from the last year, dishes that are essential to Houston's cultural landscape and/or dishes that any visitor (or resident) should try at least once.
I was only introduced to Cedars Bakery earlier this year, but was immediately enchanted by the homey atmosphere in what is, really, a very large bakery and the wonderful mana'eesh, or flatbreads, that are Cedars's specialty. Built upon the pita bread that's the staple product at this Lebanese bakery, mana'eesh come with several different toppings -- and the sojok is its best and most distinctive offering.
I like to call sojok "Lebanese chorizo" because it's the simplest way, to me, to describe the dry, crumbly sausage. Although it's made with beef (and although it's technically from Armenia originally, not Lebanon), the flavor profile is the same: cumin, paprika, garlic. There's even that signature trace of brightly colored grease left behind -- orange in chorizo's case, a darker terracotta color in sojok's.
In that vein, imagine a breakfast pizza made with chorizo: That's sojok mana'eesh. The sausage clings to a light layer of halloum cheese that is spread on the pita bread before it's run through one of Cedars's giant brick ovens. Making it even better is a bowl of lebne ordered on the side, good for using the "pizza bones" to their greatest end when that savory sojok is all gone.
