100 Favorite Houston Dishes 2015, No. 16: Bone-In Pork Belly at Killen’s Barbecue

Phaedra Cook is eating her way through Houston and counting down her 100 favorite dishes of 2015. It's a collection of personal favorites that is also indicative of Houston dining. It's a scene where a vast range of dishes coexist: highbrow and lowbrow; local and international; cheap and expensive; modern cuisine and beloved tenets — and everything in between.

Meat lovers, say this to yourself: “bone-in pork belly.” It doesn’t even sound real, does it? It is, though, and it can be found at Killen’s Barbecue in Pearland.

This is one of several reasons why folks line up outside the door every morning. Neither rain nor oppressive humidity dissuades smoked meat lovers. Some travel for many miles for a taste of chef Ronnie Killen’s barbecue.

The bone-in pork belly is possible thanks to a special cut that leaves the ribs attached instead of removing and cooking them separately. Killen and his staff apply a thick, even layer of their salt and black pepper blend to the belly side and then let the ribs smoke for several hours.

Essentially, imagine a giant hunk of uncured bacon — as a smoked rib. The end result is porky heaven. The bone-in pork belly is one of the best barbecued meats ever invented.

Considering how awesome Killen’s beef ribs also are, that’s saying a lot.
