Phaedra Cook is eating her way through Houston and counting down her 100 favorite dishes of 2015. It's a collection of personal favorites that is also indicative of Houston dining. It's a scene where a vast range of dishes coexist: highbrow and lowbrow; local and international; cheap and expensive; modern cuisine and beloved tenets — and everything in between.

The Butcher’s Cut at Underbelly changes regularly depending on what chef Chris Shepherd has available. Often, it’s a steak. (It was a strip the day we visited.) Sometimes, it’s a hearty pork chop or a collar steak.

Despite the ever-changing selection, there are always some guarantees to count on. It will never be the product of factory farming. It will always come from a humane rancher who raises livestock with tried and true practices. It will be served with produce that also came from within the same 150-mile radius. The best guarantee of all? It also will be really thick, flavorful and tasty.

Shepherd sources Underbelly's meat from within a 150-mile radius. His suppliers include 44 Farms for beef and Black Hill Ranch for lamb and goat. Underbelly's food is local — truly farm-to-table, not some twisted definition of what that means. It's a practice that Shepherd committed to back when he was still a chef at Brennan's of Houston almost a decade ago.

The day we visited, our tender, thick strip steak came on top of cauliflower purée, with an assortment of local vegetables that included thinly sliced radishes, onion, peppers, greens and celery leaves. Locally sourced meat isn't cheap — the Butcher's Cut usually costs around $45 — but it's hearty. Two people who order one or two small dishes alongside shouldn't have any problem sharing.
