Phaedra Cook is eating her way through Houston and counting down her 100 favorite dishes of 2015. It's a collection of personal favorites that is also indicative of Houston dining. It's a scene where a vast range of dishes coexist: highbrow and lowbrow; local and international; cheap and expensive; modern cuisine and beloved tenets — and everything in between.

It’s 1 p.m. on a Tuesday and there’s a reggae duo playing onstage in the back of The Breakfast Klub. Lunch ends up being even more festive than expected in a restaurant that’s known for its communal atmosphere as much as for its long lines. The musicians are quite good. I throw a few bucks into their tip bucket and go back to my table, where more fun is waiting. In this case, it’s sitting on my plate.

I still remember a time when fried chicken and waffles seemed like an odd combination, but these days more people understand why it's such a wonderful matchup. It’s the play between savory and sweet at work. The waffle and maple syrup (which The Breakfast Klub keeps hot in a big metal carafe in the self-serve area) play nicely with the spiciness and fattiness of the fried chicken.

The Breakfast Klub’s rendition comes with five wings and a big, Belgian-style waffle. I can never finish the whole thing. Three wings and half the waffle is plenty and I take the rest home. I love the spicy, crispy, salty coating on the wings and drizzling a little syrup on them and a little more on the waffle.

It’s great to be able to get a hearty, savory breakfast at 1 p.m. Visit The Breakfast Klub on weekdays if possible to avoid the line, but even if you end up there on the weekends, the fried chicken and waffle is worth waiting for. Enjoy yourself, and while you’re waiting, talk to your neighbors to pass the time. You never know what you’ll learn or who you’ll meet.
