The Louisiana Boucherie ($22) at Brennan's (3300 Smith, 713-522-9711) is a meat lover's dream that's a pretty good representation of Louisiana meat products. There are slices of pork loin marinated in chicory coffee, which gives them a dark brown hue; a rich, hockey-puck-size piece of boudin; and an empanada stuffed with a mixture of onion and andouille sausage. Vegetable lovers will enjoy the rest of the dish, which includes field greens and Creole-marinated beans, with a glaze made from three different mustards.
