I'll put an egg over leftover chili, for a southwest version of "eggs in purgatory" which is what I call your "Tomatoes and Eggs." I also love a soft egg over a tostada and fixings. And I make a vaguely "Asian" brown rice salad topped with a soft egg. Good stuff.
