The crispy cashew calamari ($12.50) at Eddie V's (12848 Queensbury Lane, City Center, 832-200-2380) have layers of crunch. The calamari themselves are lightly battered and then wok-fried and topped with sesame seeds. They're served on top of Asian noodles that maintain their crispiness for as long as it takes to finish this superb dish, which isn't long. Cashews add more texture, along with mini watercress, bean sprouts, chopped scallions and julienned carrots. A moderate level of spiciness comes from red chiles and Sriracha sauce, which is counteracted by another sauce made from ginger, soy and brown sugar.
