Eddie V's Prime Seafood
Bill Greenwood is the executive chef of the new Eddie V's Prime Seafood (12848 Queensbury Ln., 832-200-2380) that just opened in the swank CityCenter. Bill came from Aspen and spent the last year at the Eddie V's in Fort Worth. "We are based in Scottsdale and this is our fifth Eddie V's," he says. "We also run two other concepts, Wild Fish and Roaring Fork. We buy all our meat from Allen Brothers in Chicago and fly our fish in three times a week from the East Coast and our sashimi direct from Hawaii, so all the seafood is a maximum 36 hours away from the water. We also have a great raw bar with fresh oysters."
Chuck Criswell is the GM, and as it happens, he is also the son of Ann Criswell, who was the food editor at the Houston Chronicle for many years. "Eddie V's is a prime seafood and steak place with rhythm, since we have live jazz every evening. We have top-notch food and preparation as well as atmosphere with a beautiful interior," says Criswell.
When Dish visited one evening, we found a lush environment that was formal, yet very comfortable, with outstanding service that never missed the mark. As for the food, the tuna tartare and calamari appetizers were both spectacular and the filet mignon was as tender and flavorful as any steak in the city. The combination of outstanding food, service and decor will make this place a must-visit, sooner rather than later.
