El Matador's spinach chicken enchiladas ($8.99) consist of burrito-size, handmade flour tortillas crammed full of finely diced chicken, sautéed fresh spinach and Monterey Jack cheese. This is topped with a slightly tart, creamy tomatillo-cilantro salsa and more melted cheese, which becomes a molten mass that binds everything together.
