Hello, Dilly: In the midst of the otherwise regulation Chinese menu at Hunan's Restaurant [3835 Bellaire, (713)666-2000] is a gem of a dish called Chinese Pickle Noodle Soup. Unlikely as it may sound, it's a tummy-warming bargain big enough for two at $4.50, available for dining in or delivery. A big bowl of rich, salty broth is stuffed full of thick, slippery vermicelli noodles, narrow ribbons of chewy pork and the surprising spark of slivered pickles. That's right: bumpy green dill pickles, the kind more commonly spied on a hamburger, cut in thin strips and added at the last minute to the pot. Don't scoff till you try it.
