At Chef Roberto Castre's new Latin Bites (1302 Nance, 713-229-8369), you'll find a ceviche bar not unlike a sushi bar at Japanese restaurants, albeit a lot smaller. The ceviche mixto ($12) is a colorful dish with pink shrimp, white flounder and calamari rings, and ultra-thin strips of purple onion. The citrus marinade known as leche de tigre, made with lime juice and hot pepper, is served in a small glass with pieces of chacla, or crispy yellow corn, floating on top. The bright orange dressing adds to the color of the dish, as do two thick slices of orange sweet potato.
