Officially called cuscinetti ($17.50), the dish features three cushions stuffed with mozzarella cheese, tomatoes and thinly sliced prosciutto. Grilling gives the concoctions a welcome smokiness and melts the cheese until it softly billows out the ends of the pillows. Just as you're well on your way to the never-never land of indulgence, a tangy garlic-herb butter sauce hits your tongue, causing an experience more eye-opening than restful.
