au de Lait at Stella Sola
The salty crispy skin on the suckling pig leg served at Stella Sola is like a giant sheet of cracklins wrapped around some juicy pork roast. It is an amazing thing to put in your mouth. The dish is served for two at Stella Sola. I split it with my wife for our anniversary, which is cheating since she won't eat pig skin.

"Stella Sola" means "Lone Star" in Italian. Some have credited Bryan Caswell and Bill Floyd (Reef, Little Bigs) for coming up with this new Texas-Tuscan hybrid, but actually local Sicilian-Texans have been working this angle for a long time. The recent success of lavender farms in the Hill Country and the high praise Texas wineries are getting for their Sangiovese and Viognier have lately reinforced the Texas-Mediterranean connection.
But I wonder why Stella Sola uses the French term for suckling pig instead of the Italian? Probably because our neighbors in Louisiana have made couchon de lait famous, while few of us have ever heard of maialino allo spiedo. Chef Justin Basye has also garnered a lot of attention for his salumi dishes. (Try the fried head cheese balls.) Don't miss his slow-roasted stuff, like the braised short ribs or his pasta sauces like the wild boar ragù.
