Robb Walsh's 100 Favorite Houston Dishes: #38 Banh Bot Chien at Tan Tan

Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #38 Banh Bot Chien at Tan Tan

The fried egg cake called banh bot chien looks like an omelet with big square potato chunks--only the chunks are actually fried rice cake. A while back, I was eating banh bot chien with David Bueher at one of my favorite Vietnamese sandwich shops, Thiem Hung Bakery at 2108 Pease, near the intersection with St. Emmanuel. Bueher, who is very keen on the local Vietnamese food scene, told me that this banh bot chien didn't even come close to the banh bot chien at Tan Tan, the famous noodle house at Bellaire and Ranchester. So, of course, I dutifully reported to Tan Tan to try Houston's ultimate banh bot chien.

Yow! What a rice cake omelet! It's the way the rice cake is fried that seems to make the difference. Everywhere else I've had the dish, the starch cubes are dry and mealy in the middle. At Tan Tan, the inside of the cubes has the texture of melted cheese, only it's the fresh-fried rice batter itself you are tasting.
