Robb Walsh's 100 Favorite Houston Dishes #40 Indian Borsch at Indika
Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #40: Indian Borsch at Indika
This spicy Indian beet soup is one of the best bowls of vegetarian soup I've ever had. It looks like classic Russian borsch, but is made with coconut milk and garbanzo beans and seasoned with a distinctive masala. It comes with a spinach and cheese fritter on the side. The beets supply the bright-red color and the rich, earthy flavor, while the coconut milk gives the soup a silky texture and a tropical taste. The pureed beans are the thickener that gives it all some body.
A small bowl is five bucks, while a big bowl is eight. Get the large. If you're still hungry, try a "Grilled Chicken Naan Sandwich with Spinach, Goat Cheese and Mango Chutney" on the lunch menu.
Indika continues to embellish its reputation as one of the most innovative Indian restaurants in the country. Anita Jaisinghani worked as the pastry chef at Café Annie for nearly two years before opening the original Indika on Memorial. The new restaurant on Westheimer is even more inviting.
But as brilliant as she is, chef-owner Anita Jaisinghani owes part of the credit for her success to the palates of Houstonians. What makes Jaisinghani's food great is that it's not only among the most creative takes on Indian cuisine in the country, it's also muy picante when it's supposed to be. Thanks to the "bring it on" palates of jalapeño-happy Houstonians, Indika's fabulous, fiery Indian food has found the audience it deserves.
