Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #41 The BBQ Burger at Guy's Meat Market on O.S.T.
Every day, Guy's Meat Market puts 200 partially-cooked half pound, ground round patties in the barbecue smoker with smoldering hickory for about an hour. They sell the burgers from 11 a.m. until they run out, which is generally a little after noon. If you make the mistake of getting one of these burgers with lettuce, tomato, mayonnaise and the usual condiments, you will be disappointed. But if you treat it like a barbecue sandwich and ask for BBQ sauce, onions and pickles or jalapeños, you will be rewarded with a stellar lunch.
Guy's is a Houston landmark. Brad "Guy" Dickens opened the original Guy's Meat Market on Almeda in 1938. He opened a second store on Scott and Southmore in 1946. Then, in 1958 he moved to the current location on O.S.T. When Guy Dickens retired in 1970, his son, Brad Dickens, a Texas A&M graduate and Vietnam war veteran, took the store over. Dickens started the smoked hamburger tradition around 1988.
Brad evidently gets a big kick out of misspelling things on the store's signage. The hambergers (sic) are available with "pickols, unyuns and jalipinos" according to the board near the counter where you order.
