#49 Ceviche at Yelapa
Yelapa is the seafood restaurant on Richmond near Blue Fish and the Hobbit Hole. Yelapa's ceviche, which the menu lists as crudo plates, are the most interesting thing to eat there. No, "crudo" doesn't mean "crude" in Spanish; it means "raw." There is also "cooked cebiche" for the timid.

I like Yelapa's ceviche when its made with mahi-mahi, as our native dolphinfish or dorado is known these days. Along with the dolphinfish, the ceviche often includes shrimp and little bits of squid.
L.J. Wiley, the ambitious rookie chef at Yelapa, uses local ingredients and Latin American techniques in his Nuevo Tex-Mex cooking style. He puts Cara Cara oranges, ujukitsu, pommelo, Meiwa kumquats, basil, roasted tamarind oil, avocado, black sesame-pasilla paste, hibiscus flakes, gris-gris powder and fairy dust in his ceviche. Don't worry, I can't taste half of that stuff either.
