Robb Walsh's 100 Favorite Houston Dishes #56 Chicken-fried Steak at Frank's Chop House
Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #56 Chicken-Fried Steak at Frank's Chop House
The chicken-fried steak at Frank's Chop House (3736 Westheimer, 713-572-8600) is house-breaded and expertly fried to order so that the tenderized meat arrives covered with a crunchy blanket of golden batter. I got the cream gravy on the side. I like to cut off pieces of the battered steak and dip them individually in the gravy so that the crust doesn't get soggy.
Frank's Chop House set out to be a steak house. But between the economic downturn, the stiff competition, and the tastes of the elderly River Oaks clientele, it's clear that owners Frank Butera and Frank Crappito had to make some compromises. Frank's excellent chicken-fried steak was only offered at lunch when I visited. But in an effort to attract more customers, the restaurant started offering the chicken-fried steak as a dinner special on Wednesdays. They are also offering old-fashioned buttermilk fried chicken on Tuesdays.
Houston has lots of steak houses to choose from, but there are very few restaurants doing as good a job with battered-to-order chicken-fried steak and fried chicken. Hopefully the two Franks have put the CFS and the fried chicken on the regular dinner menu by now.
