Robb Walsh's 100 Favorite Houston Dishes: #6 Barbecued Ribs at Pizzitola's
Over the course of the next few months, I'm counting down 100 of my favorite Houston dishes. I chose some because they are such quintessential Houston creations, others for their cultural or historical significance, and others because they are just so damn tasty. #6 Barbecued Ribs at Pizzitola's
The two-and-a-half-pound racks at Pizzitola's are the smallest-size spare ribs available -- just a little bigger than baby backs. While barbecue joints all over town have switched to the ridiculously large and impossibly tough four-and-a-half-pound ribs that now dominate the market, Pizzitola's pays a premium to get the tiny ribs that used to be the norm. The difference in quality and flavor is enormous. These tender little ribs are seasoned with nothing but salt and pepper and cooked in the oldest barbecue pit in the city.
When Texas barbecue legend John Davis opened his Shepherd Drive Bar-B-Que in 1934, it was a blacks-only establishment. Whites were not allowed inside -- they had to get their barbecue from the rear door and eat at tables in the parking lot. When Davis died in 1983, Italian-American barbecue hound Jerome Pizzitola leased the place from the Davis family and saved the grandfathered barbecue pits. Today Carlton Gould, David Reynosa and Jose Estrada run the old pits in a way that would have made Davis proud.
I only wish Jerome Pizzitola had kept the old name and made his white customers enter John Davis's Shepherd Drive Bar-B-Que from the rear entrance.
